Favourite Recipe
Warm Mushroom Salad
250g pack of jumbo mushrooms
Juice of 1 Lemon
200g of soft Goats cheese
3tbsp Double cream
½ tsp Dijon mustard
2 large beef tomatoes – thinly sliced
40gram bag of rocket
Salt and freshly ground pepper.
Preheat oven to 180c or 350f
Cut a thin slice off the bottom of the mushroom so it sits level.
Trim the stalks, season with salt and pepper and brush with lemon juice.
Make a filling by mixing the goats cheese, cream, mustard and seasoning until smooth. Spoon the filling into the mushrooms and smooth until level.
Top with a slice of tomato and drizzle with olive oil.
Bake for 12 to 14 mins, basting occasionally.
Put the mushrooms on a plate, top with rocket and serve with crisp salad leaves and crusty bread.
