Joined Moorlands on 1st March 1999 and is one of our longest serving members of staff – possibly because she can not find the exit.

Favourite Recipe - Beef Stroganoff (serves 4)
500grams of Beef Fillet – cut into thin strips
2 Shallots – peeled and finely choped
1 clove garlic – peeled and finely chopped
225g of button mushrooms - sliced
4 tbsp vegetable oil
1 tbsp plain flour
1 tbsp tomato puree
200mls Beef stock
142mls Sour cream
Salt & Pepper
1 tbsp chopped fresh parsley
2 tbsp Brandy
Heat oil in a large frying pan on a high heat.
Fry meat for 3-4 mins until browned all over,
Remove meat from pan.
Put shallots and garlic I nthe pan.
Once shallot have softened (2 to 3 mins) stir in the mushrooms. Cook for 5mins.
Stir in flour and cook for 1 min, stir constantly,
Stir in tomato puree,
Whisk in stock – and bring the mixture to the boil – stir until thickens.
Return beef to the pan.
Stir in cream and brandy.
Cook until hot.
Add in a pinch of salt & pepper to season.
Serve and sprinkle with fresh parsley.
